Is Airbnb still the best option if one wants to look for aparments for a time period of 3 months in countries like Thailand, South Korea and Philippines? And what platform would you use in China for short term lease?
do you also have some advice to avoid being scammed and get good deals?
I would be very thankful for any advice

Yes, there's no good alternative for low budgets. If you can spend a lot of $$$ then you can get serviced apartments or high end hotels with kitchen and everything.
yeah don't want that, want to spend 600 USD max for a one bedroom aparment and this already seems not too easy to get on Airbnb
 
You can try to find stuff like condos for 3 months, but in general Airbnb is the best option since it has the largest amount of offers and you can just book easily. Also its fairly cheap. Compare a lot and pick the one you like the most, after you've traveled a lot you will have a good idea for whats truly a hq place. I'd recommend to first book something for 4-6 weeks then changing places if you're not sure.

in places like manila, taipei, bangkok

600$ is on the lower end but an ok budget for a nice condo in SEA. It's bad timing for Thailand as the high tourist season is coming up. Taipei is not 3rd world and has very high rents. Your budget would go further if you'd also consider second tier cities.

Booking hotels for a longer period is also a good option.
